Det koger på Llama

De seneste 3 år har Llama Restaurante & Bar været blandt de første der har bragt det latinamerikanske køkken til København for alvor.

Københavnerne har taget ceviche, anticuchos og tacos til sig i stor stil og udover at Llama i dag er en af Københavns travleste restauranter, så er der nu en langt større variation af mad fra det mellem- og sydamerikanske kontinent rundt omkring i byen. En dejlig udvikling for os der kunne drikke leche de tigre til morgenmad og synes alt smager bedre i en taco.

Llama har haft flere dygtige køkkenchefer igennem de seneste 3 år og gæsterne er blevet mere nysgerrige på særlige latinamerikanske retter og smage, men med tiltrædelsen af Andrew Valenzuela som ny køkkenchef er Llamas køkken inde i en rivende udvikling og klar til at tage det næste skridt.

Andrew Valenzuela kommer fra en blandet columbiansk/mexicansk baggrund og har arbejdet flere år i Los Angeles. Han kommer til Llama fra en stilling som souschef på Taller samt restauranter som Relæ og Ink. i West Hollywood og han tager denne alsidige kulturelle inspiration med sig som køkkenchef. Andrew har en dyb forståelse for latinamerikansk madkultur og særlige smagsunivers og med sit afsæt i fine dining tager han ligeledes en præcision og finesse med sig i udviklingen af Llamas seneste menu, som vi mener er den bedste Llama nogensinde har tilbudt.

Andrew Valenzuela forklarer: ”Jeg ønsker at præsentere et latinamerikansk kvalitetskøkken, samtidig med at jeg gerne vil inkludere retter og inspiration jeg er vokset op med, såsom min fars ceviche, min mormors salsas og latinamerikansk ”soul food”, som ligger mit hjerte nær. Llama handler først og fremmest om atmosfære og lysten til at dele både autentiske og originale madoplevelser og måske smage ingredienser man ikke har fået før.”

Man behøver ikke tage i lufthavnen for at komme på en gastronomisk rejse til Latinamerika, det kan også klares med en tur til Lille Kongensgade i København hvor Andrew Valenzuela og hans team laver mad af en anden verden i mellem-prisklassen.

Last Dance

1st of September 2016 marks my last official day as creative director for Natbar at Bremen.

Founded in 2012, Natbar is now one of the biggest dance bars and clubs in Copenhagen with 1000-1200 people dancing every Friday and Saturday night in the foyer of Bremen Theater. I am very proud of what we have accomplished there and I am certain that the concept is strong enough to be one of the major continuoues parties in the city in the years to come.

Thank you to all the good people involved in bringing Natbar to life. Volcano that hired Hz for the task, Horse on Horse who has been a tremendous help in developing Natbar with me, Lasse Høgh and Waaitt for creating the visual output and graphic identity, the resident DJ’s and bands creating the Natbar sound and endless nights, the super dedicated staff, friendly door crew and last but not least Royal Beer, adidas and other partnerships along the way that helped build the experience. And most of all, the thousands of dancers and delightful guests that made magic happen for the last 4-5 years.

MAD food symposium

MAD4 is over and done with. Days of talking, dreaming, thinking food has come to and end. And what an end it was. A late night MAD bash at Llama Restaurant featuring the awesome cooking by chef Danny Bowien of Mission Chinese fame. We danced. We ate, we drank.

Exactly one year ago I was involved in the production of this reportage from MAD3 featuring the infamous Franks – Frank Falcinelli and Frank Castronovo. it was a blast. Check it out:

Superfuture

Superfuture has for quite some years been the first mover on the web when it comes to city guides, shopping and city hopping. The opening of Llama Restaurant hit the supernews feed and we’re happy to be on it.

Dezeen and designboom

The first real design blog on the internet was designboom. Fresh from 1999 and still one of the most influential design websites to this day. In 2006 Dezeen was launched and rapidly grew to become one of, if not the most, influential design and architecture sites as well with more than 3 million unique visitors a month.

Both websites featured the design of Llama this week. On behalf of the whole Llama team: cofoco, kiloBIG and Hz – thank you!

Børsen Pleasure has done a piece on Llama and the ongoing international south american/latin american cuisine trend in the latest edition of the national financial newspaper. Denmark has been kind of closed off to any culinary inspiration from outside due to the New Nordic cuisine wave that has been the major trend around these parts for the last 7-8 years. That is slowly changing and maybe Copenhagen is now ready to mix it up a little. After all, variety is the spice of life

 

 

Eating Hearts

Grand old man of food critics in Denmark Mr. Søren Frank came by our newly opened restaurant Llama the other day. He ate our hearts and gave it 4/6 stars. In his opinion, Denmark has the highest level of mid-range restaurants in the world (we have the best restaurant in the world too, being noma).

So, according to him, the 4 stars is literally a michelin star for medium priced restau’s like Llama. We don’t care for Michelin stars, but we are happy like Pharrel for this one. Come by and make up your own mind. That’s what really counts.

Man about town

Was asked to recommend what’s good about town this week by the national newspaper Politiken. It was a fixed format that didn’t leave much space for the weekly football game or a walk in the park, but seems there was plenty to do anyway.

New Place To Be

This weekend marked the official opening of Llama Restaurant & Bar in Copenhagen. After many months of building and planning it was a special night for all of us involved. Now the real work begins.

If you are in the neighborhood, drop by for pisco, or a halibut ceviche. We look forward to see you.
